I also made a Paleo no bread dressing and will post the recipe later.  It was also excellent.  Who needs bread when life gives you celery, onions, cauliflower, sweet potato, and sausage?

Saturday Snippets, best ever French fries, cleaner laundry, and is the internet making us stupid...

because it's the weekend and who needs to be mentally hassled?

Let's start with a subject of deep importance and dear to just about everyone's heart - French fries.

If you've been around here for awhile you know I'm completely sold on the need for everyone to have and use an Instant Pot electric pressure cooker - which, incidentally is on sale right now for $99.99 at Amazon.

It would be faster for me to tell you what I don't make in my Instant Pot - which is almost nothing.  Roasts, turkey breasts, stews, soup, chili, beans, lasagna, rice, hard cooked eggs, steamed veggies, cheese cake, are all done in my Instant Pot in a fraction of the time as the old way and ten times better.   

Yesterday a lady posted a picture of her Instant Pot French fries and a link to how to make them on the Instant Pot community page on Facecrap.  I was intrigued and since I have some potatoes I decided to try it.

The concept seemed pretty simple.  Pre-steam the potatoes in the Instant Pot with Kosher salt and baking soda in the water, and then fry them (either deep or shallow) and enjoy crispy fries.

Allow me to inform you that I've never, ever had a French fry that was so delicious.  Never!  They were fluffy and hot on the inside and a wonderful crispy golden brown on the outside.  They were so good that we're having them again tonight.

She has all the instructions with tons of pics at her site, but trust me, the entire project is quick and easy.

It took about 10 minutes to make them not counting the time to slice up a potato.  If you have an Instant Pot, read and follow her instructions exactly.  She also has all the chemical info on why this works.

How clean is your laundry?


Probably not very.

We purchased a new washer and dryer a few years ago and from the get go I noticed that the rinse water always looked dirty.  This is just a bottom of the line ordinary top load washing machine, so I figured you get what you pay for.

I think we all know why our dishes are not getting clean in the dishwasher - no phosphates.  I solved that problem by buying original Cascade that still had phosphates from Restockit .  Be aware that hospitals, restaurants, and other commercial concerns still use dish washing soap with phosphates so that the dishes are actually clean.  What does that tell you?

 While wandering around the intertubes (a bad habit of mine), I stumbled onto a discussion of TSP (trisodium phosphate) and laundry.  It never occurred to me that laundry soap of long ago had phosphates as part of the ingredients.

Most of the older readers here will  remember their childhood home being stocked with TSP for all the really hard cleaning jobs.  Many people still use it for cleaning and dulling painted surfaces before repainting.

After the government got involved and banned most phosphates, based on some really faulty reasoning and bad science, our dishes are no longer clean and our clothes are not clean, either.

After doing my due diligence on the subject, I popped over to Lowe's and bought a small box of TSP to add to my laundry along with my detergent.

The purpose of adding it to your dishwasher or laundry is to chelate calcium, magnesium, and other 'hardness' metal ions in the water which would otherwise form insoluble salts with the detergents.  It helps your detergent work better, keeping everything in solution so it can be removed with the water. Those insoluble detergent salts (soap scum) are far more effective at gunking things up than the relatively unsticky phosphate-metal salts.

NB: It is not a replacement for laundry soap, but only used as a booster.

I am happy to report my rinse water now looks clean and my clothes are much cleaner and smell much better than they have in years.  I have noticed no negative effects to either white or colored clothes.  I even finally tried it on my precious (and expensive) bamboo sheets.  They look and smell great!

I use 1/4 cup (4 tablespoons) in a large load, and about one TB is a small load.  After using it for several weeks I will probably cut back on the amount as it appears all the old soap scum has been adequately removed from my laundry.

The TSP pictured is available at Ace, Lowe's, Home Depot, and probably independent hardware stores also.  Beware of packages marked TSP with a flag that says "phosphate free."  WTHell?  How can you call it TSP if it has no phosphate?

Is the Internet Turning Our Brains to Mush?


Probably.

I finally acquired a copy of The Shallows: What the Internet Is Doing to Our Brains, by Nicholas Carr, which was a Pulitzer Prize finalist in 2011 for general non-fiction.

Much as I'm looking forward to reading this, it will, no doubt, confirm what I already know to be true.  In 1990 Jane Healy, Ph.D explored this idea of neural reprogramming of children's brains being done by excessive TV watching in her classic book  Endangered Minds: Why Children Don't Think And What We Can Do About It. 

In 1999 she published FAILURE TO CONNECT: How Computers Affect Our Children's Minds -- and What We Can Do About It

Anyone who thinks that overuse of computer technology by children, or even adults, is not a problem has not been paying attention - or maybe they can't pay attention due to over use of their technology.  Witness people walking around clutching their smart phones likes it's a pacifier, and you'll know there's a problem.  

I spend an inordinate amount of time online and have noticed an inability to concentrate as well as I used to be able to do.  Lately, I have also started to "flit" from one thing to another while online like a drunken squirrel has been turned loose in my head. This cannot be healthy.  

No - I'm not advocating throwing your computer out.  I am suggesting that most of us need to keep this wonderful tool in its proper place and perhaps limit our exposure.  I mean, really - do we need to look up the best way to make the perfect soft boiled egg again?

I don't plan on spending too much time on the cast of Hamilton being boorish and stupid because, in the big scheme of things, they are irrelevant.  They're a bunch of nobodies, singing (poorly) music of no note (is that a pun?), and displaying overt racism.  This band of mostly black "actors" rely on white people of money to fund their crappy play.  It will never stand up to a comparison with Cats or Phantom of the Opera. 

And then we have Gigi Hadid, daughter of Islamic Jordanian multi-millionaire Mohamed Hadid and a dutch born mother, mocking (poorly) the first lady-elect Melania Trump at some music award show by doing an imitation (poorly) of Melania's accent.  If it wasn't for her father's millions, estimated to be between 100-200 million, she'd be just another beach bunny in California.

After having her nose re-shaped, her lips and breasts artificially
pumped up, an apparent eye lift, and cheek filler why she didn't bother to have her ears pinned back remains a mystery.

Women's March


A whole bunch of women who don't have anything better to do, are ganging up together to march on Washington, DC on Jan. 21st.  Why?  Because they feel insulted and marginalized.  If they can't make it to Washington, each state will have it's own march.

Allow me, as a "deplorable, racist, homophobic, misogynist, xenophobe, bitter clinger, right wing religious fanatic" to weigh in.  Your angst and "fears" are not about "rights."  It's simply about your being pissed off because you didn't get your way.  What you are doing is not a protest, but a temper tantrum.

It didn't leave this for last because it was least important, but because it's the most important.  Suddenly, the MSM is all is a twist over "fake" news.  These bastions of liars, are going to do their best to shut us down.  You know, us "deplorable, racist, homophobic, misogynist, xenophobe, bitter clinger, right wing religious fanatics" because we don't tell the truth.

And yet, the "liberals who behave badly™" suck up any crazy crap they read at the New York Times, WaPo, or listen to on NPR and call it truth.

Thanksgiving


Since our Thanksgiving is a small affair a turkey breast is enough. And this year, I'll be doing it in my Instant Pot, which I understand produces turkey that is moister than even one that has been brined.  Now I'm headed in to do hard cooked eggs.  Did I mention that I love my Instant Pot?

Product Review: The Instant Pot Electric Pressure Cooker...w/ Update IT'S ON SALE!!!!

The Instant Pot Electric Pressure Cooker

 

 You need it!  Really you do.


I've waited to review this wonderfully handy appliance until I had it for awhile.  I use to have a regular stove top pressure cooker and used it quite often.  The last time I used it many years ago, I stored it with the lid engaged.  Think we could open it?  Nope.  We finally broke off the handle trying to get it open. 

A number of weeks ago, I decided to get a new pressure cooker.  My pressure canner doubles as a pressure cooker, but it's 23 qts - a bit big for a family of two (ya think?).  While at Walmart I thought I'd cruise by and see what they had and spied an electric pressure cooker.  My first thought was that the dumbest idea I've ever heard of (I can be scornful that way). 

When I returned home, I logged on the Amazon and searched pressure cooker.  The first one to come up was the Instant Pot.  At that time it had over 11K reviews, the majority 5 star, and 800 or so answered questions.  It's now over 12K reviews and over 1K questions. Hmmmmmmm, maybe I'd gotten this wrong (Noooooo!).  After doing my due diligence, I decided to purchase one. It's become one of my all time best moves ever.

So far I've made roasts, both beef and pork, chicken, chili, beans, soup, rice, and steamed veggies in a fraction of the time of my old methods.  A 4 lb roast takes about 45 minutes, not including coming to pressure and cooling off time which adds about 15 minutes.  Rice?  About 3 minutes at pressure and it comes out perfect.

There's no monitoring it like a stove top cooker.  Just push a button and walk away.  It automatically does it's job and shifts into keep warm mode.  

If you've never used a pressure cooker before, there will be a small learning curve involved.  If you've used a stove top pressure cooker, you'll catch on pretty quickly.  

My mantra throughout life has always been, "There's got to be a better way", which applied to most of the recipes I found online for the Instant Pot.

For instance, most will have you cook a roast and when it's done bring the pressure down with rapid release, take off the lid and quickly add the veggies and reset the timer.  I made this much simpler by first browning the roast on the saute setting, adding broth, bringing to pressure, which usually takes about 5 minutes, and cook the roast.  When it is done, I let it count down 10 minutes in warming mode, release the pressure, and remove the roast to a serving platter to rest.  I add the veggies to the meat juices and set it for about 5 minutes pressure time.  That way I'm not having to scrape up veggies from the top of the roast and it actually takes less time.

Last night I used the steam function for veggies for the first time.  I used a regular steaming rack and it took about 2 minutes for a load of broccoli, cauliflower, asparagus, and carrots.  

Imagine having a pot roast dinner and veggies ready to serve in not much over one hour.  Compare that to 4 or more hours in a conventional oven which is sucking up electricity. 

If you're like me and don't get something out of the freezer in time for dinner, you can kiss that problem goodbye.  If it's a large item, I defrost it in the microwave and cook it in the Instant Pot.  Smaller items can be cooked from frozen.

The Instant Pot can also be used as a slow cooker, but I wonder why anyone would want to do that, but that's just me.

The inner cooking pot is high grade stainless steel and a snap to wash.  

The Instant Pot even makes yogurt, which is not on my list of things I want to do before I die, but if you like making yogurt, go for it.  

If you grew up like I did with your mom screeching at you to not go near the pressure cooker because it could blow up, rest assured the Instant Pot cannot blow up.  It does, however, lack the drama of a stove top model.  No little rocking pressure thingy, no hissing, and no monitoring.  The first time I cooked with it felt really weird.  Push a button and walk away.  Who ever heard of such a thing? 

I also just discovered you can make soft or hard cooked eggs using the steamer insert.  Whoa!  And there's an Instant Pot Community on Facebook with over 159K members offering insights and recipes galore.  Cheesecake in the Instant Pot?  I'm all for that!

The model I have linked to, Instant Pot IP-DUO60 7-in-1 Multi-Functional Pressure Cooker, 6Qt/1000, is the most functional size for most families.  One blogger (a man) who cooks for a family of 5 uses and recommends the 6qt.  If you do a bunch of large batch cooking, you may want to get the new 8 qt model.
